Fruited Curry Chicken Salad

I love all kinds of chicken salads and love to experiment with them by mixing or adding different ingredients. I just love chicken!  This recipe I made was inspired by my recent visit to a family restaurant (Diner Type) in Tribeca and a free recipe card I received in the mail from the Wild Mint Shop. It came out delicious. I liked the fact that my daughter loved it.  Lately she is willing to try the new food with no problem. This is great.

Fruited Curry Chicken Salad

Ingredients ( I used all organic ingredients) Will make 4-5 servings.

1 Pound of Chicken, grilled, cooked and diced

2 stalks of Celery, cubed

1 apple, diced

1/2 cup of raisins (next time I want to try dry cranberries instead)

1/2 cup of seedless grapes. Green or red. Halved. (oh so yum! Lately I notice I have been adding grapes a lot to a various salads)

1/2 teaspoon of curry powder

1/2 cup of Mayonnaise

1/2 cup of Swiss cheese, diced.

Salt and pepper to taste.

Directions:

In a large bowl combine the chicken, celery, apple, raisins, grapes, pepper, curry powder and mayonnaise. Mix all together. Serve!  I noticed that this salad is best if eaten the day after preparation. This allows the ingredients time to mingle, giving a fuller flavor. I served it on super seed crispy crackers. Next time I want to try it on honey pita.

I’m always on a lookout for a new delicious and healthy recipes incorporating chicken. I found this Fruited Curry Chicken Salad healthy and delicious. What chicken salad to you make or what ingredients to do you like to mix in your chicken salad?
