I have recently started a plant-based eating lifestyle in effort to live a happier and healthier life. Never being a huge vegetable fan in the past, this has proven to be a little challenging at times. Especially when trying to encourage my children to enjoy them. Luckily for them, I have become quite diverse in vegetable prep these days! I honestly had to find a new way to serve vegetables day in and day out.
