A few weeks back I was visiting family for Thanksgiving and went into a food market to browse a bit. They had a lot of their holiday treats on display, which inevitably ended up in my cart somehow. (I blame my kids, but in reality it was all me. I am a sucker for sweet treats. *insert a surprised and guilty looking face here*) Anyway, one of the treats I picked up was dark chocolate drizzled popcorn. It looked heavenly. Compared to most of the other treats that ended up in my cart, it was by far the healthiest choice.
As I started snacking on it, I couldn’t stop. It was so good. Not too sweet or rich…simply perfection. When all had been consumed, I felt sad that I didn’t buy two bags of this amazing chocolate drizzled popcorn, but then the thought came to me….”Lila, you can make this from home for less than half the cost.”
Eureka!! My mind had given me something that made my heart (and tummy) jump for joy!
I knew just what I needed to do.
So I headed to grocery store and picked up a box of microwaveable kettle corn and some almond bark in vanilla and milk chocolate flavor. I love working with almond bark because it hardens very quickly, which makes most treats available for serving minutes after dipping. I literally use it for almost everything requiring dipped chocolate.
Upon returning home, I cleared space on my counters and began popping a bag of kettle corn. Less than 3-minutes later I put 1 small brick of chocolate almond bark into the microwave for 90-seconds.
While the almond bark is melting, I grabbed a cookie sheet and lined it with wax paper. Then, I poured the popped kettle corn onto the cookie sheet.
After the chocolate almond bark has melted, I then put in a small brick of vanilla chocolate almond bark for 90-seconds more.
Using a spoon, I evenly drizzled the chocolate almond bark over the kettle corn until it was all used up. The same was done with the vanilla chocolate almond bark.
After that it only takes a minute or two of waiting for the chocolate to harden, then it is ready to eat, or package up as a sweet treat for others.
One thing I love to do around the holidays is to make sweet treats to enjoy at home and give to friends and neighbors. Typically I will make rice krispy treats, snickerdoodle cookies, oreo truffles, or pumpkin spice cheesecake squares. All of these are delicious, however most take a considerable amount of time to prepare.
In the title of this post, I referred to it as a “no guilt” treat and I stand by that. Kettle corn, when popped, is only about 25 calories per a 1 cup serving. Add a little drizzled sweetness to it, and 1 cup is well under 100 calories. Compared to the other sweet treats I make, the chocolate drizzled popcorn is, hands down, the healthiest, easiest and quickest treat to make.
Package some up in cute brown paper sacks with ribbon, clear treat bags, or in a dish on a dessert table. I promise you and your company will thank me for it later!

Chocolate Drizzled Popcorn Recipe
1 Bag Microwaveable Kettle Corn (Popped)
1 small brick chocolate almond bark (melted)
1 small brick white chocolate almond bark (melted)
*Spread the popped kettle corn out on a cookie sheet covered in wax paper.
*Drizzle melted chocolate over kettle corn.
*Wait a minute or two….ENJOY!
